Cheffe Maria-José de Frias
Co-Owner, Le Virunga
The story of Chef Maria de Frias mixes culture, diversity, identity, art and audacity. And this is exactly what we find in his approach to gastronomy. Coming from a family of entrepreneurs, Maria worked in several trades before training as a professional headteacher at LaSalle College in Montreal and indulging in cooking, a passion she has always had in her.
After stints at the Bitoque and the Mess Hall (now the Centrale), it is in her own restaurant, the Virunga, that she combines spices from Cameroon, Beninese side dishes, Tanzanian marinades and Quebec products.
Her dream: to see recipes from her continent integrate the daily life and eating habits of all households around the world, one spoonful at a time.
The event will be in French.
